It's that time again! The big game!! I don't usually have a party but we do go to my inlaws so I always like to have something to bring. My staple is usually Buffalo Chicken Dip...we love that stuff. Maybe I'll try to bring one of these new ones as well. Don't forget to head over to BooMama's Diptacular, a linky party she holds every year full of fantastic dips...and new blogs to visit too =)
Crockpot Buffalo Chicken

This would be perfect to have cooking all day long. That way it can double as a dip or for sandwiches to start out.
Slow Cooker Buffalo Chicken
- 3 lb. bag of frozen chicken breasts
- 1 bottle Frank's Wings Buffalo Sauce
- 1 packet Ranch Dip Mix
- 2 TBSP butter
- Put frozen chicken, wing sauce, and ranch dip mix into crock pot.
- Cook on low at least 6 to 7 hours
- Using two forks, shred chicken & return to crock pot.
- Add butter.
- Cook on low for an additional hour
Hot Spinach and Artichoke Dip
I love Spinach Dip, I haven't met one I didn't like.
Hot Spinach & Artichoke Dip
Ingredients:
- 13.75 oz artichoke hearts packed in water
, drained
- 10 oz frozen spinach, thawed and squeezed
- 1/4 cup chopped shallots
- 1 clove garlic
- 1/2 cup fat free Greek yogurt
- 1/2 cup light mayonnaise
- 2/3 cup Parmigiano Reggiano
- 4 oz shredded part skim mozzarella cheese
- salt and fresh pepper to taste
- olive oil spray
Directions:
Preheat oven to 375°.
In a small food processor, coarsely chop the artichoke hearts with the garlic and shallots.
Combine all the ingredients in a medium bowl. Place in an oven-proof dish and bake at 375° for 20-25 minutes, until hot and cheese is melted. Serve right away.
Can be made one day in advance and stored in the refrigerator before baking. Makes about 3 3/4 cups
BLT Rollers

Perfect bite sized versions of a BLT, this is great finger food for passers-by! You could even save a few calories by preparing with light or fat free version of cream cheese and mayo.
Ingredients
4 oz. (1/2 of 8-oz. pkg.) PHILADELPHIA Cream Cheese, softened
1/4 cup KRAFT Real Mayo Mayonnaise
8 slices OSCAR MAYER Bacon, cooked, crumbled
1/2 cup chopped tomatoes
2 flour tortillas (8 inch)
1/2 cup shredded romaine lettuce
Directions
Mix cream cheese and mayo in medium bowl. Add bacon and tomatoes; mix well.
Spread onto tortillas; top with lettuce. Roll up tightly.
Cut each into 7 diagonal slices.

Yum yum yum! I made the buffalo chicken a few years ago (or something like it), and it was goo-ood.
