Midweek Morsels: Chili for Christmas

This year, instead of going for the huge traditional dinner, with so many leftovers that we can't possibly eat them all, we will be eating......CHILI!!!  My mom has decided that chili and sandwiches are on the menu this year and I can't be happier.  After 30 years of the same turkey and ham dinner (at my in-laws now too!) I am super excited about the change-up.  I'm also in charge of making one of the two kinds of chili on the menu!  We decided that one should be with beans and one should be without.  I am making mine without beans and with Italian Sausage.  This is gonna be so good!  I got my recipe off of the Uncle Charley's Sausage website, which is the brand of sausage that I usually buy....so that worked out great =) I'm hoping that it doubles well!

Italian Sausage Chili

1 Lb. Uncle Charley's Hot Italian Sausage
1 small Onion, minced
1 T. Chili powder
2-16 oz Cans Red Kidney beans
1-12 oz. Can or Bottled Beer
1 Jar Uncle Charley's tomato sauce with peppers & onions
1-4oz, can chopped mild green chilies
¼ t. dried Oregano Leaves
1 oz+ Container Sour Cream
3 oz (3/4 cup) Monterey Jack or Cheddar cheese, shredded


Remove sausage from casing. Cook sausage, onion, and chili powder stirring to break up sausage, until sausage is browned and onion is tender
Add beans with liquid, beer, sauce, chilies, and oregano leaves. Heat to boiling.

Reduce heat to low, simmer 15 min, stirring occasionally.

To serve, spoon chili into 6 bowls. Spoon sour cream over chili,
Sprinkle with cheese.


**Update** - Everything doubled great, except the beer.  Next time I'll use less beer...maybe a 16 oz bottle for a double batch.
